Soooo, today I took the classic chocolate chip cookie and turned it into a cupcake! Which sounds like more work then it actually was – Jo had a recipe for chocolate chip cupcakes w/chocolate frosting, so all I did was follow said recipe, just like I’ve been doing basically. However, it was still yummy and satisfying, so yay for that.
Now for story time because I have an important life lesson to share… Yesterday I was wandering around in nature and decided to just kind of chill in a tree and listen to music for a while. Okay, so I just realized how that probably sounds and no, I don’t do drugs or anything, that’s honestly just how I roll. Anyhow, so I was hanging out in this tree and I kind of dozed off for a bit and because of that my back has been killing me all day. The moral of the story here is that even though it might sound cool to sleep in a tree or whatever, your back probably won’t thank you for it the next day, so hopefully you can learn from my mistakes and avoid that situation.
Just another update because this is something that I was super jazzed about this morning and therefore it might come up again in the future – so a fun fact about me is that I’m into art; mostly I just draw, but I like to mess with other artsy things as well and this morning I had what I thought was an awesome idea for a mixed media type piece. There’s kind of a back story to the whole concept that I’m not going to get into, but the timing of this piece and just the whole idea of it feels really right at the moment and I think it’s just what I need, so I’m pretty psyched about it honestly. The reason I mention this is because a) I just felt like sharing since sharing is caring and b) I’ll probably post a picture when I’m finished, so I guess this is a bit of a teaser for that or something… yeah, okay I’m not sure about that, but the sharing is caring thing’s legit!

I didn’t get to making today’s cupcakes until about 11:00, which is why technically I’m late in posting this and they are actually yesterday’s cupcakes. However, regardless of that, wrapping up the day with midnight brownie cupcakes was really good. They’ve got a thick fudge-y frosting that might not necessarily look too appetizing but was pretty delicious. Plus Andrea, Andrew and I ate them hot out of the oven, which is always great. It also occurred to me that brownie cupcakes are a pretty genius invention, at least if you’re like me and prefer the corner pieces of brownies. Brownie cupcakes are basically all corner pieces, which is pretty awesome in my mind. Just a random update, the internet at the house has been a little iffy lately and while it hasn’t impacted my blogging (besides making this particular post take about 20 minutes longer than it should) and I don’t think it will in the future either, I just wanted to apologize in advance if it does, so that’s what’s going on at this end of the world…
To be perfectly honest, I wasn’t initially too jazzed about today’s cupcakes because I made a banana cake and I don’t really like banana too much. The obvious solution to this issue would have been for me to just do something else then, but Jo had some bananas that were going bad and she asked if I would be able to use them, so I figured I might as well since I hadn’t thought of a cupcake for the day anyways. They actually came out pretty good too – I wasn’t too crazy about the whole banana flavor, but they were cooked well, not dried out or anything and the frosting was interesting. It was a cinnamon and honey butter cream, which complemented the banana cupcakes pretty nicely.
Today I made cupcakes without eggs because we’re running a bit low and I didn’t feel like walking to the store to get more today, plus knew it was possible, so I figured why not? I found a recipe that’s technically for peanut butter muffins, but I made it without oatmeal and put on frosting, therefore making them into cupcakes. For the frosting I made more of an icing type deal that my mom uses on brownies and which is always amazing. It was my first time making it on my own, and it came out really well, plus we ate the cupcakes right after I iced them, and it’s pretty hard to go wrong with peanut butter cupcakes dripping with warm chocolate.
In other news, I also re-dyed my hair this time, so now I have purple bangs again, which I’ve always liked. I did have a light blue-ish color going on with some light purple going through it, which I liked, but I felt like it was time to change it up a bit, so I went with purple. So yeah, baked some cupcakes and dyed my bangs purple, pretty much just your average Monday (don’t worry, I did other stuff too, it’s not like I spent my whole day on just those two things).
Today I made key lime pie cupcakes and Jo (one of my house mates – not sure why I haven’t been using names, it honestly doesn’t make a difference, it’s not like people are gonna stalk our lives or anything … therefore, I’m just going to start using names because it’s easier) reported that they were the best ones yet, which is pretty cool. They got all around good reviews and while I agree that the taste factor was decent, I thought the texture of the cake was a bit off. The way I did these was to make a graham cracker crust on the bottom, then a plain cake with just some lime zest in it, and then a lime curd on top. I’ve never made a curd or whatever before, but it was really simple and really good too, so that was a success. I was going to make some whipped cream to top things off, but the heavy cream got used up so that didn’t happen. I feel like it wasn’t too much of a loss though because the cupcakes were still good and it went to a good cause, which was a chowder that Jo and Andrew made with crayfish.
Yup, there’s a first for everything, that’s for sure. A few of us went swimming today at a creek near-ish the house and the guys spent most of the time catching crayfish. It was actually kind of impressive, I think we estimated that they got around 20 or so, plus then they caught about a dozen teensy minnow-ish fish (possibly minnow-ish, I actually have no idea but that’s what I’m going with). The fish weren’t to eat of course, that would’ve been kind of ridiculous. Those got put into the fish bowl with the three goldfish that my sister (Andrea) and Andrew (her boyfriend) have already. The crayfish however got cooked by Andrew and then peeled (or whatever the equivalent of that is for crayfish) and put into a chowder, which was very good according to him and Jo. The rest of us opted for pasta instead which was very good, as pasta usually is. Of course I’m not particularly picky, I’m fine with just throwing some cheese on it and calling it a day, but our friend Garrett made the pasta for us with some olive oil and garlic – pretty straightforward but really really good. Overall it was a nice chill ending to a good weekend.

Today was another hot one – I kind of feel like I’m melting just sitting here typing this in. We signed up for a CSA (Community Supported Agriculture) recently and today was our first pick up for that, so we’ve got a lot of produce in the house. Therefore, carrot cake cupcakes! Plus it means that I got to make cream cheese frosting again, so I’m all for that. The cupcakes came out very moist and taste pretty great if I do say so myself. The frosting is of course delicious and the recipe I used was for “double decker” cupcakes, so I Cut off the tops of the cupcakes and put a layer of frosting in the middle before replacing the tops and frosting the cupcakes. The only small issue was that this heat makes the frosting melt a little, so the cupcakes were pretty messy, but still delicious, so I’m happy with them. Plus they have carrot in them, so obviously they’re practically health food. Its win-win-win (I’m not sure where the third win comes from, but I’m sure it exists somehow).
